Merica: pronounced mare-rich-e-ah, the Indonesian word for spice, particularly used for all types of the region’s favorite vegetable: the honorable and revered pepper.
The all-day dining Merica is at the heart of our 103-hectare resort. This main gathering place offers a welcoming front bar, as well as private or casual dining settings, including cozy pavilions on our Koi pond. At Merica, guests dine overlooking the ocean surf, the manicured gardens of the cliff lawn and the revered Tanah Lot temple. Chef Sébastien serves timeless Pan Asian and Pacific Rim cuisine popular in the region, with a Balinese contemporary flair.
Merica is also the centre stage for our bountiful breakfast buffet, served from 6:00 am to 10:00 am daily. Indulge in a regional selection of Asian and European breakfast specialties served with freshly squeezed local juices and freshly made Javanese and Balinese mountain ground coffee.
Regional culinary favorites are served à la carte for lunch and dinner, supplemented by International dessert displays and appetizer antipasti buffet selections.
Merica’s weekend International brunch is always a highlight. Between 11:30 am and 3:30 pm on Saturdays and Sundays, guests can enjoy six dedicated culinary stations and be witness to the largest array of desserts, including a wide variety of Valrhona chocolate specialties. All stations are complemented with served offerings and à la carte selections.
The Merica Bar serves inventive mixes and also features a Bloody Mary buffet, which includes an amazing 27 different varieties of fresh pepper grown in the region.
