Pan Pacific Perth welcomes new Executive Chef Graham Burst

Graham Burst Pan Pacific Perth is pleased to announce the recent appointment of Graham Burst as Executive Chef. Graham will oversee the hotel’s two award-winning restaurants, Montereys and Origins, plus the hotel's 24-hour In-Room Dining, Pacific Club Lounge and its extensive meeting and event facilities.

With 28 years experience at leading establishments throughout Hong Kong and the United Kingdom, Graham brings an impressive wealth of knowledge to the hotel. General Manager of Pan Pacific Perth, Kim Powley comments “Pan Pacific Perth is delighted to have Graham on board. He has hit the ground running and we are already seeing the impact of his vast culinary knowledge as he evolves our hotel dining experience. Food trends are of paramount importance and this is being translated into menus across the hotel”.

The hotels signature restaurant Origins will undergo a significant transformation over the coming months, with the introduction of a new dining philosophy.

 

Executive Chef of Pan Pacific Perth, Graham Burst comments “It’s great to be in Australia and I am very excited to be on board at Pan Pacific Perth. In 2014, our philosophy will be focussed on creating simple dishes with star ingredients. It’s all about sourcing the very best produce, packed full of flavour and making sure we’re bringing it from the market to our guests within the shortest possible timeframe. Australia and WA in particular has world renowned beef, super fresh fish and when you throw in the likes of Manjimup truffles, you can see why chefs love to work with Australian produce”.

The new concept is very much about great service, a relaxed atmosphere and a trend towards “share food”. Small plates include freshly shucked oysters and seared scallops with tuna loin, yuzu, konbu, daikon and cucumber. For larger appetites, Tinder Creek duck breast and leg confit with mustard mash and braised red cabbage or the open raviolo with roasted Tuscan vegetables will not disappoint.

A premium grill selection is also featured, along with desserts including caramel pecan and popcorn cheesecake.

Graham brings with him 28 years experience at leading hotels in the United Kingdom and Hong Kong. Most recently Graham was Executive Chef at the InterContinental Hong Kong where he headed the kitchen for its seven restaurants between 2009 and 2013. This included the hotel’s Michelin-star restaurants such as The Steak House Wine Bar & Grill, NOBU by Nobu Matsuhisa, Spoon by Alain Ducasse and Yan Toh Heen.
